Roland Recommends – Soba Noodle Salad with Feta

Think that Feta cheese only goes with Western dishes? Think again! Chef Roland Scherer has developed a new Japanese-style noodle dish, using Feta cheese. In this recipe, the Soba noodles, combined with sesame oil, honey and soya sauce, contrast wonderfully with the creamy richness of the Feta cheese. This is the perfect light lunch or a side dish for your favourite protein.

Japanese Style Soba Noodle Salad with Feta

  • 8 ounces cooked soba noodles
  • ½ Japanese cucumber, diced
  • ½ red or yellow bell pepper, thinly sliced
  • ¼ cup chopped green onion
  • ¼ cup crumbled feta cheese
  • ⅛ cup chopped coriander
  • ⅛ cup chopped mint

Dressing

  • ¼ cup extra virgin olive oil
  • 2 tbsp rice vinegar
  • 1 tbsp light soya sauce
  • 1 tbsp honey
  • 1 tbsp toasted sesame oil
  • 1 garlic clove, minced
  • Salt and pepper to taste

Cook the soba noodles according to the directions on the packet. Rinse and allow to cool.

In a large bowl mix the soba, diced cucumber, bell pepper, scallions, coriander and mint.

In a small bowl whisk together the ingredients for the dressing.Pour the dressing over the soba noodle mixture and toss to combine.  Arrange crumbled feta over the top.  Serve chilled.
